This unoaked Chablis has a lovely crisp, dry chardonnay palate with classic mineral qualities, displaying oyster-shell aromas, with hints of mushroom, leaf and honey. Lime flower acidity is here with lingering floral and orchard fruit notes.

Jacques Simonin cultivates his inherited plots of chardonnay around the Mâconnais village of Vergisson with real passion. The resulting eponymous wine is an intense golden lemony colour, with a spicy bouquet of pears, apples and vanilla. Modern in style.

Another offering from Jacques Simonin, this Saint-Véran has a lovely nose of honey, pear and apple with a great creamy chardonnay mouthfeel. It exhibits typical minerality that allows it to be enjoyed as an aperitif or as an accompaniment to fish and poultry.

POUILLY FUISSE VIEILLES VIGNES 2006

A real favourite on our list, this Fuissé from Jacques Simonin is an organic wine made from 60-year-old chardonnay vines. Dry, stony and taut, it has aromas of cinnamon butter and brioche, with the taste of white peaches and pears, and a slightly spicy vanilla finish.
